Welcome to the "About Me" section of my web site.

Between working, school, and my children, there isn't much time for anything else, so my hobbies are few. I enjoy cooking when I have the time,
and I love to travel, which I do as often as possible. In addition, I love trips to the beach in the evenings with the kids and long walks along Bayshore.
I find both relaxing. Below are some pictures from some of my travels and a wonderful recipe for microwave peanut brittle.

Peanut Brittle
1 cup sugar
1/2 cup light corn syrup
1 cup of raw unsalted peanuts
1 teaspoon butter
1 teaspoon vanilla
1 teaspoon baking soda
Directions: Spray a cookie sheet with cooking spray. Combine sugar and corn syrup in a microwavable bowl. Stir and place in the microwave for
3.5 minutes on high. Remove and add peanuts. Stir well. Microwave on high for 3 minutes. Remove and add the butter and vanilla. Microwave for
1 minute. Remove and add the baking soda. Stir until light and foamy. Pour onto the cookie sheet.
